1. Heat Onion, cumin seed, garlic, ginger, cilantro. When onions are soft add tomato.
2. When tomatoes are soft, add the spice powders. Cook on low heat.
3. Roast or cook eggplant over a open flame to char the skin. Peel and mash up eggplant and add to tomato mixture.
4. Garnish with cilantro. Serve with warm Pita or Naan.
