Preheat oven to 400° drizzle shrimp with olive oil, salt and pepper and roast in the oven for 5 – 6 minutes. Cook the pasta according to package directions and drain. Wisk the olive oil, lemon, salt and pepper together and pour over the warm pasta. Add all remaining ingredients, combine and set aside for one hour at room temperature or refrigerate overnight. Serve at room temperature
On this recipe feel free to substitute goat cheese for feta or substitute your favorite herbs or add nuts or olives.
