In a medium pot, add in the butter and begin to melt. Once melted, slowly add in flour until slightly thick. Allow to cook for 1 minute then slowly pour in milk while stirring constantly. Continue to stir until desired thickness and simmer for 5-10 minutes. Add in cheese, creole mustard, salt and pepper.
Put a large sauté pan on medium heat. Pour in a cup of oil and allow oil to reach medium heat. Mix eggs and milk and place in mixing bowl along side the rice flour. Season sliced green tomatoes with salt and pepper then batter going from flour, to egg wash, then back to flour. Fry in oil until golden brown on each side then place on paper towels to remove any excess oil.
In another large sauté pan, sauté onions, bell pepper and garlic until translucent. Add in ground pork and cook through. Season with creole seasoning until desired taste.
To finish dish, place a few fried green tomatoes on a plate and top with pork and drizzle sauce over. Add a small pinch of parsley for color and enjoy!
