Combine the sweet potatoes, onions and in a large bowl and season with salt, pepper and ¼ cup of Delightful Palate’s Wild Mayhaw Berry vinaigrette. Place vegetables on a baking sheet and put in a pre heated oven at 375 and bake for 20 – 30 minutes or until potatoes are tender when pierced with a knife. When cool, finely chop the red onion .In a large bowl mix the sweet potatoes, red onion, cranberries spinach, pecans, green onions feta in a bowl season with salt and pepper and garnish with fresh sprouts.
