Spring Salad with Watermelon Vinaigrette

Ingredients

Dressing
  • 1/2 cup watermelon puree
  • 1/2 cup honey
  • 1 T apple cider vinegar
  • 1 T Dijon mustard
  • 1/2 cup extra-virgin olive oil
  • salt and pepper to taste
Salad
  • Fresh Corn, cut off cobb
  • Mixed greens
  • Watermelon, cubed
  • Baby Tomatoes, sliced in half
  • Green Onion or Red Onions, sliced

Combine salad ingredients over mixed greens.

Combine all dressing ingredients together and mix well. Serve over salad.
