Vegetable Curry Soup

Ingredients

  • 2 Large Carrots diced
  • 1 Large Red Onion Diced
  • 4 Bell Peppers Diced
  • 1 Head of Cabbage Shredded
  • 1 Bunch of Dino Kale Shredded
  • 1 Bunch of Cilantro Chopped
  • 4 Cloves of Garlic Chopped
  • 5 Ripe Tomatoes Chopped
  • 1 Small Container of Mushrooms Sliced
  • 4 Quarts of Water
  • 2 Tablespoons Curry Powder
  • 2 Tablespoons Onion Powder
  • 2 Tablespoons Paprika
  • 1 Teaspoon Ground Ginger
  • 1 Tablespoon White Pepper
  • Kosher to Taste
  • 3 Tablespoons Olive Oil

In a large stock pot pre heat add olive garlic carrots onions peppers and tomatoes sweat down.

Add cabbage kale and mushrooms add half of the seasonings to the veggies.

Add water and  let come to a boil then adjust seasoning to taste.
