Watermelon Fresco Salad

Recipe by JP Roots, The Velvet Cactus
Ingredients
- 4 qts watermelon, seedless, 1" diced
- 1.5 cups red onion, 1" julienned
- 1.5 cups queso fresco, crumbled
- .50 cup balsamic vinegar
- 1.5 cups banana pepper rings
- .25 cup banana pepper juice from jar
- .50 cup cilantro, chopped
- 1/8 cup olive oil
- 1.5 T salt
- 1 T white pepper
- 1 T sugar
- .75 T garlic powder
Combine all ingredients. Serve chilled. Recipe serves a large crowd.
Please note this makes a large quantity. You can reduce the recipe for smaller amounts.
