Ingredients
- 3 large beets
- 1/4 cup milk
- 8 Tbsp unsalted butter
- 1 1/4 cup sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 2 large eggs
- 2 tsp vanilla extract
- 3/4 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 cup chocolate chips
Directions
- Cut up beets in 1-inch cubes and put in a boiling pot of water. They are ready when a fork can go through (about 30 minutes).
- Puree beets and milk in a blender until smooth.
- Preheat oven to 325ºF and grease an 8×8 inch pan.
- Melt the butter on a pan once it is browning and remove from heat.
- Add the sugar, cocoa powder, and salt to combine. In a separate bowl, beat eggs.
- Once the butter mixture is cool, slowly add in the eggs. Add vanilla and 2 cups of the beet puree.
- Stir to combine.
- Add flour and baking powder. Stir to combine.
- Add chocolate chips and stir. Bake for 25-35 minutes.
