Beet Brownies


  • 3 large beets
  • 1/4 cup milk
  • 8 Tbsp unsalted butter
  • 1 1/4 cup sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips


  1. Cut up beets in 1-inch cubes and put in a boiling pot of water. They are ready when a fork can go through (about 30 minutes).
  2. Puree beets and milk in a blender until smooth.
  3. Preheat oven to 325ºF and grease an 8×8 inch pan.
  4. Melt the butter on a pan once it is browning and remove from heat.
  5. Add the sugar, cocoa powder, and salt to combine. In a separate bowl, beat eggs.
  6. Once the butter mixture is cool, slowly add in the eggs. Add vanilla and 2 cups of the beet puree.
  7. Stir to combine.
  8. Add flour and baking powder. Stir to combine.
  9. Add chocolate chips and stir. Bake for 25-35 minutes.
