Ingredients
- 2 eggs
- 1/2 cup milk
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 6 to 8 slices of bread
- 1 tablespoon butter
- Pure maple syrup or a sprinkle of powdered sugar for serving
Directions
Crack the eggs into a small mixing bowl.
Whisk in the milk, cinnamon, and vanilla extract.
Transfer the mixture to a pie pan.
Heat a heavy large skillet or griddle over medium heat and melt half of the butter in the skillet.
Dip bread into egg mixture, coating both sides, and immediately transfer to skillet (you may have
to work in batches depending on the size of your skillet).
Cook until crisp and golden brown, about 2 minutes per side, adding butter as needed (a two-
handed operation: lift the cooked slices of French toast with a spatula in one hand, and using a
butter knife, smear a dab of butter on the skillet before turning the toast)

Add ground ginger to the egg mixture for a gingerbread twist
Serve with a side of fresh fruit and maybe some bacon if you’re feeling luxurious
