Ingredients
- 5 large sweet potatoes
- 1 pumpkin
- ~ 1/2 cup honey
- 1/4 tsp salt
- 1/4 tsp Creole garlic
- 8 oz whipped feta
- crostini or graham crackers to serve
Directions
- Preheat oven to 350º.
- Bake 5 large sweet potato until softened, then peel. Add honey to taste and roast for 10 minutes.
- Carve out 1 cup pumpkin while sweet potatoes are baking. Reserve seeds and flesh.
- Bake flesh until softened.
- Once pumpkin and sweet potatoes are softened, blend until smooth and chill.
- Once chilled, add 8 oz creamed feta, 1/4 cup honey, salt, and creole garlic.
- Pour into pumpkin shell and chill.
- Serve with crostini or graham crackers.
