Honey Roasted Sweet Potato Pumpkin Dip

Ingredients

  • 5 large sweet potatoes
  • 1 pumpkin
  • ~ 1/2 cup honey
  • 1/4 tsp salt
  • 1/4 tsp Creole garlic
  • 8 oz whipped feta
  • crostini or graham crackers to serve

Directions

  1. Preheat oven to 350º.
  2. Bake 5 large sweet potato until softened, then peel. Add honey to taste and roast for 10 minutes.
  3. Carve out 1 cup pumpkin while sweet potatoes are baking. Reserve seeds and flesh.
  4. Bake flesh until softened.
  5. Once pumpkin and sweet potatoes are softened, blend until smooth and chill.
  6. Once chilled, add 8 oz creamed feta, 1/4 cup honey, salt, and creole garlic.
  7. Pour into pumpkin shell and chill.
  8. Serve with crostini or graham crackers.
