Ingredients
- 3 eggs, whisked together
- 1 oz Cutrer’s smoked sausage, small dice
- 1/2 oz tomato, diced
- 1/2 oz rainbow chard, chopped
- 1/2 oz Spring onion, chopped
- 1/2 oz Bell pepper, diced
- 1 oz goat cheese
- Salt and pepper to taste
Directions
Sauté sausage, tomato, chard, onion, and bell pepper. In a separate nonstick pan, begin cooking eggs, stirring and leaning pan to allow eggs to cook until firm. Add sauté mixture and cheese. Fold, plate, and enjoy.
