Market Omelet


  • 3 eggs, whisked together
  • 1 oz Cutrer’s smoked sausage, small dice
  • 1/2 oz tomato, diced
  • 1/2 oz rainbow chard, chopped
  • 1/2 oz Spring onion, chopped
  • 1/2 oz Bell pepper, diced
  • 1 oz goat cheese
  • Salt and pepper to taste


Sauté sausage, tomato, chard, onion, and bell pepper.   In a separate nonstick pan, begin cooking eggs, stirring and leaning pan to allow eggs to cook until firm.  Add sauté mixture and cheese.  Fold, plate, and enjoy.
