Mushroom and Goat Cheese Crostini
Ingredients
- about 1/4 cup olive oil
- 16 oz oyster mushrooms, sliced
- ½ cup diced diced shallots
- 2 garlic cloves, peeled and minced
- 2 tsp fresh thyme leaves
- ½ teaspoon salt
- 1 Tbsp balsamic vinegar
- 2 Tbsp heavy cream
- 1 French baguette, diagonally sliced
- 6 oz goat cheese, softened
- balsamic vinegar and fresh thyme leaves for topping
Directions
- Warm ~3 Tbsp olive oil in large skillet over medium heat. Add mushrooms & shallots. Cook 6-8 min., stirring occasionally. Add 1-2 Tbsp olive oil if needed.
- Stir in balsamic vinegar. Remove from heat. Stir in the heavy cream. Begin pre-heating your broiler.
- Spread goat cheese onto baguette slices. Place on a baking sheet. Top each slice w/ ~1 Tbsp of mushroom mixture.
- Place on baking sheet under broiler. Broil 2-3 min, until mushrooms sizzle & bread browns around edges.
- Remove from oven & transfer to serving plate. Drizzle crostini w/ balsamic & sprinkle w/ thyme, if desired. Serve warm.
