Mushroom and Goat Cheese Crostini


  • about 1/4 cup olive oil
  • 16 oz oyster mushrooms, sliced
  • ½ cup diced diced shallots
  • 2 garlic cloves, peeled and minced
  • 2 tsp fresh thyme leaves
  • ½ teaspoon salt
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp heavy cream
  • 1 French baguette, diagonally sliced
  • 6 oz goat cheese, softened
  • balsamic vinegar and fresh thyme leaves for topping


  1. Warm ~3 Tbsp olive oil in large skillet over medium heat. Add mushrooms & shallots. Cook 6-8 min., stirring occasionally. Add 1-2 Tbsp olive oil if needed.
  2. Stir in balsamic vinegar. Remove from heat. Stir in the heavy cream. Begin pre-heating your broiler.
  3. Spread goat cheese onto baguette slices. Place on a baking sheet. Top each slice w/ ~1 Tbsp of mushroom mixture.
  4. Place on baking sheet under broiler. Broil 2-3 min, until mushrooms sizzle & bread browns around edges.
  5. Remove from oven & transfer to serving plate. Drizzle crostini w/ balsamic & sprinkle w/ thyme, if desired. Serve warm.
