Pickled Cucumber Salad


  • 1 large cucumber
  • 2 tbsp rice wine vinegar
  • 1/2 tsp. sesame oil ( optional)
  • 1 tsp. honey or sugar
  • 1/2 tsp. sea salt
  • 1/2 coarse black pepper
  • 1/2 tbsp. sesame seeds


Combine vinegar and honey in a bowl and whisk or mix with a fork until honey is dissolved.

Add in sesame oil and mix until well combined.

Rinse and peel the cucumber. You can thinly chop the cucumber, use a mandolin or cut it into strips with a potato peeler.

Add to the bowl.

Add seasonings and mix well with a fork. Top with the sesame seeds.
