Sauteed Cabbage & Lardons with Green Onion

Ingredients

  • 1 small head cabbage, quartered, core removed, and sliced into œ inch strips
  • ÂŒ lb bacon, cut into ÂŒ inch by ÂŒ inch strips
  • 1-2 sprig green onion, chopped to ÂŒ inch pieces
  • Salt & pepper, to taste

Directions

Heat pan over medium low heat and cook bacon for 5-7 minutes, rendering as much fat as possible.
When bacon is well browned, remove to a plate and pour off all but 3 Tbsp of fat from the pan.
Add slice green onions and sauté until soft and translucent.
Add sliced cabbage to pan and increase heat to medium-high and sauté until just wilted (about 4-5 minutes), stirring often.
As soon as cabbage is cooked, remove it from the heat, add back the bacon and season to taste with salt and plenty of black pepper.
Serve and enjoy.
