Ingredients
- 1/8 cup of cooking oil
- 1 pound fresh Louisiana shrimp, peeled, any size
- 4 cups of fresh okra, whole
- 1 can rotel
- 1 onion
- 1 tbsp cooking oil (olive oil is great)
- 1 quart Uncle Larry’s Stew in a Few
- 1 cup water
- market vegetables of choice (tomatoes, peppers, mushrooms, etc)
Directions
- Pour oil in sauce pan. Turn heat to medium- medium/high.
- Add onion &sauté until tender, about 3 min.
- Add okra, Rotel style tomatoes and peppers. Season w/ salt & pepper. Simmer for 15-30 min, or desired texture. Set aside.
- Add shrimp. Sauté until shrimp turns pink.
- Add 2 cups of smothered okra. Continue to sauté until okra is heated & incorporated into the shrimp.
- Add the Stew in a Few & a cup of water. Stir well. Bring stew to a boiling point. Reduce heat.
- Simmer for 5 minutes. Serve over white rice.
Tips to avoid slimy okra:
- Do not cut okra into pieces. Allow okra to cook whole so mucus does not extract itself out of the vegetable.
- Soak the okra in vinegar for about 30 minutes and rinse it out before cooking.
- Cook the okra for no more than 30 minutes to reduce the risk of the mucus sipping out.
