Triple Stack Vegetable Frittata


  • 1 lb. Fresh Yellow Squash, Zucchini, Green Beans, or Spinach
  • 2 Eggs
  • ¼ cup Heavy Whipping Cream
  • ½ cup Parmesan Cheese
  • ¾ cup Bread Crumbs
  • 1 Tbsp. Italian Seasoning
  • Pinch of Garlic Powder
  • Pinch of Onion Powder
  • Pinch of Tony’s Seasoning
  • Salt and Pepper to taste


For each Frittata start by:

Cooking down your choice of vegetable with seasonings such as garlic powder, onion powder, and tony’s seasoning. Let it cool.

In a separate bowl mix together eggs, heavy whipping cream, and salt and pepper.

Once sautéed vegetables are cool, add egg mixture.

Stir in breadcrumbs, Parmesan cheese, and seasonings.

Form into patties.

Pan fry in a skillet till golden brown on either side.

Stack three high and for an elevated flavor layer with a flavored cream cheese.
