whipped goat cheese crostini w/ macerated strawberries, balsamic reduction, toasted pecans & fresh basil
Ingredients
- ingredients for whipped goat cheese:
- 10 oz goat cheese
- 1/4 lb cream cheese, room temperature
- 1/4 cup parmesan cheese
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper

- ingredients for macerated strawberries:
- 2 lb sliced strawberries
- 1/2 cup white sugar
- 1 tablespoon water
- 1 tablespoon lemon juice
- 1 teaspoon orange zest

- ingredients for balsamic glaze:
- 1 cup balsamic vinegar
Directions
directions for whipped goat cheese
- In the mixer, with the paddle attachment, mix the goat cheese, cream cheese and parmesan until creamy and smooth.
- Slowly drizzle in the olive oil until fully blended. Season with salt and pepper.
directions for macerated strawberries
- Mix all ingredients together and allow strawberries to macerate for at least one hour.
directions for balsamic glaze
- In a small pot reduce balsamic vinegar by one half. Cool to room temperature.
directions for crostini
- Spread whipped goat cheese on a slice of toasted french or sourdough bread.
- Top with macerated strawberries and pan-toasted pecans.
- Arrange on a decorative serving platter, drizzle with balsamic reduction, sprinkle with finely sliced basil leaves, serve and enjoy.
