Ingredients

  • ingredients for whipped goat cheese:
  • 10 oz goat cheese
  • 1/4 lb cream cheese, room temperature
  • 1/4 cup parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • ingredients for macerated strawberries:
  • 2 lb sliced strawberries
  • 1/2 cup white sugar
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • 1 teaspoon orange zest
  • ingredients for balsamic glaze:
  • 1 cup balsamic vinegar

Directions

directions for whipped goat cheese

  1. In the mixer, with the paddle attachment, mix the goat cheese, cream cheese and parmesan until creamy and smooth.
  2. Slowly drizzle in the olive oil until fully blended. Season with salt and pepper.

directions for macerated strawberries

  1. Mix all ingredients together and allow strawberries to macerate for at least one hour.

directions for balsamic glaze

  1. In a small pot reduce balsamic vinegar by one half. Cool to room temperature.

directions for crostini

  1. Spread whipped goat cheese on a slice of toasted french or sourdough bread.
  2. Top with macerated strawberries and pan-toasted pecans.
  3. Arrange on a decorative serving platter, drizzle with balsamic reduction, sprinkle with finely sliced basil leaves, serve and enjoy.
