Ingredients
- 1/2 lb. Sweet Potato, peeled and grated
- 1/2 Tbls. Fresh Garlic, minced
- 1/2 Tbls. Cilantro, minced
- 1/2 Tbls. Fresh Ginger, minced
- 6 oz. Cooked Red Lentils or Hummus
- 3/4 Tbls. Toasted Flaxseed (Ground or Flour)
- 3/4 Tbls. Oat Flour
- Dash Reduced Sodium Tamari Soy Sauce
- Dash Kosher Salt
- Dash Black Pepper
- 1 1/2 tsp. Red Stick Spice Moroccan Blend
- Dash Sesame Oil
- As needed, Water or Veg Stock
- 1/2 ea. Lime, Juiced
- 1 oz. Plain Greek Yogurt
- 1 Tbsp.Tahini Paste
- 1/2 Tbsp. Fresh Garlic, minced
- 1/4 tsp. Ground Cumin
- 1/4 tsp. Black Pepper, Frsh Grnd
- To taste, Cilantro, minced
- 1 oz. water
- Dash kosher salt
Directions
For the Sweet Potato Burgers:
Peel Sweet Potatoes and grate them. Place in a bowl. Pulse chop cooked lentils until almost smooth. Add to Sweet Potatoes. In a separate container, combine the remaining ingredients and mix well. Add these ingredients to the sweet potato and lentil mixture. Incorporate all ingredients really well. Next form the mixture into patties. Line a sheet pan with parchment and spray it with non-stick spray. Bake at 350 for 15 min. After 15 mins, flip patties over. Place back in oven for another 15 mins or until done. Remove and cool.
For the Cilantro Lime Tahini Sauce:
Combine Lime Juice, Tahini Paste, Garlic,water, and seasonings and blend until smooth. Place in bowl and mix in yogurt and cilantro.
