Hello summer! The rich Louisiana summer harvest is here. Let the celebrations at Red Stick Farmers Market begin!
 
Did you know? BREADA celebrates the abundant summer produce with Fresh Fest, highlighting a different agricultural product each week. Thank you to Louisiana Healthcare Connections for sponsoring this year’s Fresh Fest. 
 
We’re kicking it off with a squash-tastic week at the market! 

Our vendors will have beautiful varieties of summer squash, like patty pan squash, green zucchini, zephyr, golden rod, and yellow squash.

1. Stop by our market info booth to pick up your Harvest Hunt.
2. Collect 6 out of 9 stickers and bring back at the end of the summer to receive a special prize! 
3. To receive a sticker, you must purchase an item from one of our vendors that highlights the Fresh Fest theme of the week. Items can be purchased from at any of our markets.
4. Stop by the BREADA info booth with your purchase to receive your sticker. 
5. Bring your completed Harvest Hunt back by August 19th to claim your prize!

Nutrition Corner

We’re taking a quick 2-month break from highlighting nutrients to celebrate Fresh Fest products! There are over 100 different varieties of squash which come in many different shapes, sizes, and colors. Squash is full of flavor and nutrients. Summer Squash contains vitamins A, B6, and C, fiber, potassium, and folate!

Roasted Squash Salad

Recipe from Anne Milneck

Ingredients

1 lb cubed butternut squash
2 tsp Autumn Spice Blend
1 Tbl maple syrup
2 Tbl Roasted Garlic Avocado Oil
6 cups salad mix
2 cups arugula
1/4 cup shaved red onion
1/4 cup dried cranberries
Rosemary Extra Virgin Olive Oil
Fig Balsamic Vinegar
Salt & Pepper
1 cup cooked Farro
1/2 cup crumbled feta
1/4 cup roasted pecans

Directions

  1. Preheat oven to 375 degrees. Line a sheet pan with parchment. In a bowl, toss together the butternut squash, maple syrup, Autumn Spice Blend and Roasted Garlic Avocado Oil. Spread onto the parchment-lined sheet pan and roast for 15-20 minutes, until tender-crisp and golden brown. Set aside.
  2. Place the salad mix, arugula, dried cranberries, and shaved red onion in a large bowl and drizzle with Rosemary Extra Virgin Olive OilFig Balsamic Vinegar, salt and pepper. Toss, taste and adjust with more oil, vinegar, salt and pepper, if desired.
  3. To plate the salad, place the dressed greens on a platter. Top with the cooked farro. Top with the roasted squash and garnish with pecans and feta.
