Avery’s Orzo Salad


  • 1 Lb Orzo Pasta
  • 1 C Green Onions
  • 1 C Parsley
  • 1 C Dill
  • 1 Cucumber-Seeded and Chopped
  • 3/4 C Red Onion-Diced
  • 1/2 Lb Feta Cheese
  • 2 Lbs Shrimp-Peeled and Deveined
  • 1/2 C Olive Oil
  • 1/2 C Lemon Juice
  • 2 Tsp Salt
  • 1 Tsp Pepper
  • 1 C Tri Colored Cherry Tomato-Quartered


Preheat oven to 400° drizzle shrimp with olive oil, salt, and pepper and roast in the oven for 5 – 6 minutes. Cook the pasta according to package directions and drain. Whisk the olive oil, lemon, salt, and pepper together and pour over the warm pasta. Add all remaining ingredients, combine and set aside for one hour at room temperature or refrigerate overnight. Serve at room temperature

In this recipe feel free to substitute goat cheese for feta or substitute your favorite herbs or add nuts or olives.
