Ingredients
- 3 lbs turnips
- 3 Tbsp olive oil
- 3-4 garlic cloves, finely chopped
- 1 Tbsp capers or chopped Kalamata olives
- zest of 1/2 lemon
- 1 Tbsp lemon juice
- 3 Tbsp chopped parsley
- pinch of salt
- pepper to taste
Directions
- Preheat oven to 400ºF.
- Peel & thinly slice turnips. Cook them in batches in olive oil over medium heat for about 10 min or until caramelized.
- Finish the turnips in a 400-degree oven for about 10 more minutes. Quick, easy, delicious.
- Finish with a little salt & a lot of black pepper.
- Serve with a mixture of the garlic, parsley, capers or chopped olives, lemon zest and lemon juice.
