Fresh Louisiana Tomato Sauce

Ingredients

  • 5 Tbsp butter, roughly chopped *
  • 7 garlic cloves
  • 5 pounds tomatoes, roughly chopped *
  • 1 Tbsp fresh basil or 1 tsp dry basil *
  • 1 Tbsp fresh oregano or 1 tsp dry oregano *
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • Grated parmesan cheese (optional)
  • pasta or crackers for serving

Directions

  1. Spread tomatoes, butter & garlic out on a large, rimmed baking sheet. Season w/ herbs, salt, & pepper.
  2. Roast at 350ºF for 2 hours. Allow to cool. Remove some of the skins & blend on high in food processor until smooth, about 5 minutes.
  3. Taste to adjust seasoning. Serve w/ pasta or crackers.

Note: the roasted tomatoes can be frozen as is or as a sauce.
