Ingredients
- 5 Tbsp butter, roughly chopped *
- 7 garlic cloves
- 5 pounds tomatoes, roughly chopped *
- 1 Tbsp fresh basil or 1 tsp dry basil *
- 1 Tbsp fresh oregano or 1 tsp dry oregano *
- 1 teaspoon black pepper
- ½ teaspoon salt
- Grated parmesan cheese (optional)
- pasta or crackers for serving
Directions
- Spread tomatoes, butter & garlic out on a large, rimmed baking sheet. Season w/ herbs, salt, & pepper.
- Roast at 350ºF for 2 hours. Allow to cool. Remove some of the skins & blend on high in food processor until smooth, about 5 minutes.
- Taste to adjust seasoning. Serve w/ pasta or crackers.
Note: the roasted tomatoes can be frozen as is or as a sauce.
