Louisiana Mirepoix


  • 1 large onion (1 1/2 cup diced onion)
  • 1 bell pepper (1 cup diced bell pepper)
  • 1 carrot (1 cup diced carrot)
  • 1 stalk of celery (1 cup of chopped celery)
  • 2 cloves of garlic (2 teaspoons, minced)
  • 2 Tablespoons of oil (I use olive oil)


  1. Dice, chop, or mince the vegetables as listed.
  2. Heat the oil on medium in a small frying pan or in the bottom of a pot that you are going to use to make vegetable stock.
  3. Add the vegetables and sauté in oil on medium heat until the onion is translucent.
  4. Use when making a soup stock, sauce or whatever you want to add a delicious savory flavor.
