Louisiana Strawberry, Kale & Brussels Sprout Salad

Ingredients

  • 1⁄2 cup fresh lemon juice
  • 3⁄4 cup extra virgin olive oil
  • 2 Tbsp cane syrup
  • 1 Tbsp dijon mustard
  • Salt & pepper to taste
  • 1 bunch kale, wash, trimmed & julienned
  • 1 lb brussel sprouts, julienned
  • 8 oz Southern Maids Dairy goat cheese or feta cheese
  • 5 oz chopped spiced pecans
  • 1 – 2 pints Louisiana Strawberries

Directions

  1. Combine lemon juice, olive oil, cane syrup, dijon mustard, salt, and pepper in a blender container and emulsify to make vinaigrette.
  2. Combine kale, Brussels sprouts, goat cheese or feta cheese, spiced pecans, and strawberries. Toss with vinaigrette.
