Roasted Sweet Potatoes, Spinach, and Feta Salad

Ingredients

  • 4 sweet potatoes, peeled and cut into same size chunks
  • 1 red onion, cut into wedges
  • ½ cup of Delightful Palate’s Wild Mayhaw Berry vinaigrette
  • ½ cup dried cranberries
  • 4 cups spinach or arugula
  • ¼ cup toasted pecans
  • 2 green onion, chopped
  • ¼ cup feta cheese
  • Fresh sprouts for garnish
  • Salt and Pepper

Directions

Combine the sweet potatoes, onions and in a large bowl and season with salt, pepper and ¼ cup of Delightful Palate’s Wild Mayhaw Berry vinaigrette. Place vegetables on a baking sheet and put in a pre heated oven at 375 and bake for 20 – 30 minutes or until potatoes are tender when pierced with a knife.  When cool, finely chop the red onion .In a large bowl mix the  sweet potatoes, red onion, cranberries spinach, pecans, green onions feta in a bowl season with salt and pepper and garnish with fresh sprouts.
