Southern Wedding Soup


  • 1 LB Spicy Italian Sausage
  • 1/2 lb ground beef
  • 1 T Worcestershire Sauce
  • ½ cup dry bread crumbs
  • 2 large eggs
  • ½ t garlic powder
  • 2 teaspoon parsley
  • ¼ c Parmesan Cheese
  • – Soup –
  • ½ cup Bacon Drippings
  • ½ lb fresh pork sausage
  • 2 cups cooked collard greens, endive, cabbage, kale, spinach
  • 1 cup chopped onion
  • 1 chopped garlic clove
  • 2 Quarts Chicken Stock
  • 2 cups cooked Peas, Beans or lentils
  • 2 cups fresh or canned tomatoes (chopped)
  • ½ cup fresh herbs


Prepare meatballs by combining all ingredients thoroughly. Roll small bite size meat balls. In a dutch oven, warm bacon drippings and begin searing meatballs and fresh sausage, after they have browned, add onion and garlic, two minutes later add the chicken stock and bring to a simmer. Next add tomatoes, greens and peas. Bring back to a covered simmer season with salt and fresh ground black pepper, finally finish with fresh herbs and crushed red pepper.
