Ingredients
- 4-6 cups mixed greens
- 1 pint strawberries
- 1/2 cup goat cheese, crumbled
- 1/4 cup pecan halves
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/2 cup olive oil
- 1 teaspoon salt
- 2 teaspoons black pepper
Directions
- Toss the greens, strawberries, cheese crumbles and pecans in a large bowl.
- In a food processor, pulse balsamic vinegar, honey, salt and pepper. While it’s running, slowly pour in the olive oil and turn the machine off.
- Drizzle the dressing, cover the salad and toss until very lightly coated. Serve immediately.
Yields 4 servings.
