Ingredients
- 1 LB Spicy Italian Sausage
- 1/2 lb ground beef
- 1 T Worcestershire Sauce
- œ cup dry bread crumbs
- 2 large eggs
- œ t garlic powder
- 2 teaspoon parsley
- Œ c Parmesan Cheese
- – Soup –
- œ cup Bacon Drippings
- œ lb fresh pork sausage
- 2 cups cooked collard greens, endive, cabbage, kale, spinach
- 1 cup chopped onion
- 1 chopped garlic clove
- 2 Quarts Chicken Stock
- 2 cups cooked Peas, Beans or lentils
- 2 cups fresh or canned tomatoes (chopped)
- œ cup fresh herbs
Directions
Prepare meatballs by combining all ingredients thoroughly. Roll small bite size meat balls. In a dutch oven, warm bacon drippings and begin searing meatballs and fresh sausage, after they have browned, add onion and garlic, two minutes later add the chicken stock and bring to a simmer. Next add tomatoes, greens and peas. Bring back to a covered simmer season with salt and fresh ground black pepper, finally finish with fresh herbs and crushed red pepper.
