Ingredients
- 1-2 cucumbers, quartered and chopped into ¼ – ½ inch pieces (Fekete Farms)
- 1 pint grape tomatoes, halved (Morrow Farms)
- ½ onion, sliced thin (Chenier Farms)
- ½ c olive oil
- 3 Tbsp white wine vinegar
- 3 Tbsp lemon juice
- 1 Tbsp honey (Lena, Fullness, Chenier, or T. Moise Farms)
- 1-2 garlic cloves, chopped fine
- 1-2 Tbsp dill, chopped fine (Greenhand Nursery or Mizell Farms)
- 1-2 Tbsp basil, chopped fine (Greenhand Nursery or Mizell Farms)
- Salt & Black pepper, pinch
Directions
- Add chopped cucumbers, tomatoes, and onion to a large bowl.
- Combine oil, vinegar, lemon juice, honey, garlic cloves, dill, basil, salt, and pepper in a jar with a lid and shake vigorously until liquid is uniform.
- Toss desired amount of vinaigrette with salad and mix to coat.
- Serve and enjoy.
**Making the vinaigrette ahead of time and allowing it to sit will allow the flavors to develop more. Just give it a shake before serving to make sure its mixed together.
