Cucumber & Tomato Salad with Lemon Herb Vinaigrette

Ingredients

  • 1-2 cucumbers, quartered and chopped into ¼ – ½ inch pieces (Fekete Farms)
  • 1 pint grape tomatoes, halved (Morrow Farms)
  • ½ onion, sliced thin (Chenier Farms)
  • ½ c olive oil
  • 3 Tbsp white wine vinegar
  • 3 Tbsp lemon juice
  • 1 Tbsp honey (Lena, Fullness, Chenier, or T. Moise Farms)
  • 1-2 garlic cloves, chopped fine
  • 1-2 Tbsp dill, chopped fine (Greenhand Nursery or Mizell Farms)
  • 1-2 Tbsp basil, chopped fine (Greenhand Nursery or Mizell Farms)
  • Salt & Black pepper, pinch

Directions

  1. Add chopped cucumbers, tomatoes, and onion to a large bowl.
  2. Combine oil, vinegar, lemon juice, honey, garlic cloves, dill, basil, salt, and pepper in a jar with a lid and shake vigorously until liquid is uniform.
  3. Toss desired amount of vinaigrette with salad and mix to coat.
  4. Serve and enjoy.

**Making the vinaigrette ahead of time and allowing it to sit will allow the flavors to develop more. Just give it a shake before serving to make sure its mixed together.
